With over 50 years of combined experience in commercial fishing, John Mallette and Randy Millis deliver some of the best fresh seafood in North Carolina and have developed a method of cooking that accommodates even the most restrictive diets. 

A USCG 100-ton Master Captain, John Mallette has over 20 years of experience fishing the waters off of North Carolina as well as internationally in the Caribbean, Panama, Costa Rica, and more. After his travels abroad John returned home to care for his family in 2008 and decided to make Jacksonville his forever home. Randy Millis, a native of Jacksonville, NC, is a 5th general commercial fisherman who brings over 32 years of invaluable expertise to the team and runs the operation of it all. 

On December 12, 2020, John and Randy started Southern Breeze Seafood as both a retail and wholesale seafood shop. Little did they know, this business would eventually deliver fish and seafood to top chefs from Charleston to Charlotte and up the North Carolina coast.  In addition, John worked with Tidewater Grain to create a breading for fried foods (seafood, chicken and more) that is one-of-a-kind. It relies on a gluten-free, heritage grain rice flour instead of traditional wheat flour. The rice is grown in Oriental, N.C. by Tidewater Grain Co.  

John and Randy also started a food truck where customers line up to experience their delicious southern creations. (Check their social media to see when and where the food truck is serving.) 

Committed to ensuring they protect the ocean as their source, Southern Breeze uses the sustainable fishing method. This practice harvests fish at a sustainable rate so that the fish population does not decline over time which can cause long-term negative effects in water-based ecosystems. 

Using the oldest heritage rice grown in the Americas (it dates back to 1685), Captain John created a breading made with rice flour for his seafood creations. It’s 100% gluten-free and non-GMO, allowing those who have dietary restrictions the chance to experience real southern home cooking, fried and all.  They also source all their ingredients from local North Carolina retailers, supporting other small businesses as best they can. 

Just recently, the University of North Carolina Wilmington has committed to using Southern Breeze as their exclusive vendor for fried food breading products. This company continues to grow through determination and commitment to providing the most fresh and healthy product.
